  • Organic Eggs1

Sides

  • Potatoes500 g
  • Garlic butter25 g
  • Tenderstem broccoli150 g

Method

  1. Make mash

    • Preheat oven to 200°C, no fan.
    • Peel and chop the potatoes into bite-sized pieces.
    • Add the potatoes to a pot of salted water and bring to the boil.
    • Cook for 15-20 min until soft.
    • Drain the potatoes and return to the pot.
    • Add the garlic butter and mash until smooth.
    • Season with salt and pepper to taste.
  2. Bake pastry

    • Meanwhile, unroll the puff pastry. Using the back of a knife, gently make diagonal lines across the surface, from one corner to the other, to create a crosshatch design.
    • Then slice the puff pastry into four quarters.
    • Using a fork, press the edges down to seal.
    • Whisk the egg and lightly brush each pastry.
    • Transfer to a baking tray and bake at the lowest rack of the oven for 25-30 min until golden brown in colour, and cooked through.

Tip: Baking at the bottom of the oven will help give the puff pastry a lift from the heat below so that you get a well risen and crispy bottom crust.

  3. Fry steak

    • Pat the steaks dry with kitchen paper.
    • Rub with oil and season with salt.
    • Heat a large pan over high heat.
    • Once very hot, fry the steaks for 2-4 min on each side.
    • Place on a baking tray.
    • Finish in the oven for 4-5 min (for medium) or longer, until cooked as preferred.
    • Transfer to a plate, season with pepper, and leave to rest until ready to serve.
    • Reserve the pan to make the mushroom sauce.
  4. Boil broccoli

    • Meanwhile, boil a kettle of water.
    • Add the broccoli to a large bowl with a good pinch of salt.
    • Pour over the boiling water until submerged.
    • Cover with a lid or plate for 5-6 min until softened.
    • Drain once cooked.
  5. Make gravy

    • Meanwhile, clean and slice the mushrooms in quarters.
    • Peel and finely chop the shallots.
    • Heat a large pan over medium-high heat with a small drizzle of oil.
    • Fry the shallots and mushrooms for 3-4 min until softened.
    • Add the 0.5 stock cube, cream, the measured water, a few sprigs of thyme, and a pinch of brown sugar.
    • Turn the heat down to medium and cook for 3-4 min until thickened.
  6. Serve

    • Serve the Tenderloin Fillet Steak on top of the Mashed Potatoes, and spoon over the mushroom sauce.
    • Serve the puff pastry and broccolini alongside.
